Ingredients
1 red onion
1 yellow onion
1 red bell pepper
1 poblano pepper
1 head of broccoli
1 small box of baby bella mushrooms
1 green zucchini
1 yellow zucchini
1 sweet potato
1 tbsp lime juice
1 tbsp olive oil
instructions
1) Prep ingredients
   •  Gut the peppers
   •  Peel the onions
   •  Roughly chop all veggies
2) Drizzle or spray with olive oil
3) Sprinkle evenly with taco seasoning
4) Lay all chopped veggies on a large sheet pan in a single layer (none overlapping)
5) Set broiler on high and set veggies on top rack about 5-6 inches from broiler/heating element
6) After five minutes, remove softened veggies (like the peppers), toss the remaining veggies and broil for another 5 minutes
7) Continue removing, tossing and broiling remaining veggies for about 20 minutes until you reach desired charring
8) Enjoy!
