Ingredients
2 canning jars (wide mouth; vacuum tight seal)
1 cup filtered water & 1 cup distilled white vinegar (1:1 ratio here is important)
1 cup fresh cilantro
4 red onions
2 limes
1 tbsp apple cider vinegar
1 tbsp salt
1 tbsp red pepper flakes
1/2 tbsp maple syrup or honey
Instructions
1) Prep ingredients
   • finely chop red onion into long strings (julienne) 
   • finely chop cilantro (use stems too for extra flavor!) 
   • squeeze juice from limes (some pulp is OK!)  
2) Pour all ingredients into 2 jars
3) Lightly shake to combine the ingredients (especially the syrup/honey) 
4) Allow to sit in fridge for 2-4 hours
5) Enjoy!!!

(Best if enjoyed within 2 weeks)
